The harvest takes place by selecting the grapes having reached maximum maturity, then destemming and vinifying them according to the richness of the must for 8 to 12 days.
Alain Dugas and his cellar master do the blending to obtain a rich complexity favoring balance, fruitiness and elegance of the tannins.
Each year, pending the weather conditions, the estate only produces around 240,000 - 280,000 bottles of red Côtes-du-Rhône Villages Appellation Contrôlée wines, divided between two "cuvées".

• Cassagne Special Reserve: a special vintage made with a selection from several parcels of Grenache and Mourvèdre, representing only 10% of the production.
